A use for leftover taco meat

On the left we have cheese bites, a Butterfinger, and steamed broccoli.

To the right we have cheese and spinach stuffed shells with tomato puree and left over taco meat. Yes, I said taco meat. We now have 3 people in our household with acid reflux. I know tomatoes are not the best for it, but the adults like them to much. The minion does not like tomato sauce. Our taco meat is not overly seasoned either so it is easy on the stomach. Because of the light seasoning, it works very well for other uses, like on top of stuffed shells to add some extra protein for my favorite meat eater, The Elder.

Kiwi Boat and Pasta with Andouille Sausage


For adult lunch we have organic andouille sausage on top of tri colored noodles with an olive oil, garlic, carrot, fresh tomato, and red pepper topping. I also added a piece of summer squash for some color. Besides that we have broccoli and peppermint kisses.



The minions have cheese cubes, lil' smoky links (or whatever they are called), a boat made form half a kiwi and a slice of hot house cucumber, a letter P for Pirate made out of homemade cheese bread, and some Uncle Sams cereal (GMO free).

How did I get the boat and cereal to stay? A little bit of sunbutter does wonders! The minions are so use to me using it for glue that they do not even question it.

cheater ravioli and kabob minion lunch.


Once again I had problems deciding what to make for lunch. The Elder is not a fan of leftovers. He says I can pack them, but I know him better than that. As I looked through my fridge, I remembered I had wonton wrappers. I swear those things are handy. They are pretty cheap too! I thought about making lasagna cupcakes again, but I was thinking of having those for dinner later this week. So I decided to make mushroom and cheese ravioli.

I know it sounds odd, but it is pretty good. If you are use to the thicker pasta ravioli, it takes a time or two to get use to. I cut up baby portabella mushrooms, added mozzarella cheese, and some Italian seasoning. Then I placed it in the wonton wrapper, used a little egg wash on the edges, and sealed it up. Then I placed them in boiling water for about a minute. I poured some tomato sauce into the bottom of my Easy Lunch Box and placed them on top. I made up some meatballs and turned them into octopus  Then I created a little sea floor using peas, mushroom, pearl mozzarella balls, carrots, and tomato pieces.

To the right of that I have the last of the apple and cranberry mini pies. I used a blackberry and a food pick to make a flower so it was not so boring. Below that is some steamed broccoli with some seasoning salt. 

The minions are not a fan of ravioli. So I made them 2 kabobs with nitrate free salami and mozzarella cheese. I also gave them some snap peas, baby carrots, mozzarella cheese pearls, a piece of broccoli, and blackberries.

Squid meatballs


I am having a little to much fun with The Elder's lunches. I wonder if he is wishing he had one of his frozen meals yet. These meals are normally made during 11pm and 1am while I am waiting for wither Colonel Sanders or Clark to finally go to sleep.

 On top of a bed of bow tie pasta, homemade tomato sauce, and Parmesan cheese I have 3 meatball squid. The ocean floor is made up of carrots, mushrooms, and broccoli. To the left I have steamed carrots and steamed broccoli with salad seasoning on top.

Our first Easy Lunch Box ~ meat dinosaur

I LOVE my Easy Lunch Boxes and I haven't even used them yet! The boxes are thicker than the other brands. This will com in handy when The Elder takes them to work. It is harder for him to grab and hang onto things with his disability. So sometimes things get smashed. As you can see, there is plenty of room for food. Today's lunch is for The Elder. I finally have talked him into packing a lunch instead of taking a microwave meal. 

I am sure this is not what he had in mind. Poor, poor Elder. Hahaha. Ok, I don't feel bad at all. They all know I am crazy.

I attempted to make 2 dinosaurs out of ground meat. Sadly they didn't hold up to well. I used 2 dinosaur food pick heads to make them look better. I hope The Elder returns with them. Also we have a volcano made out of homemade mashed potatoes with some butter under the carrot lava. In addition to that, we have some steamed broccoli.

The last compartment did not come out as well as planned. Believe it or not, what looks like stewed tomatoes is really cooked apples with the skins left on (red), cinnamon, lemon juice, and a little raw sugar.

Hidden Dinosaur

 Like the background? Tyke made this piece of art for me at school. Yep, he only glued 3 little things to the paper. *sighs* I guess he is a minimalist.

Anyway, this is today's lunch. We have 2 dinosaur shaped peanut butter and jelly sandwiches. I found the sandwich cutter in the dollar section at Target. I think it's an ugly cutter, but I was to lazy to look for my other one. It also looks like we have some cheese,some carrots, and a leaf of lettuce (It was off those living lettuce plants you can buy for $1.29). Let's lift that leaf up.
Oh look! There is more! Is that a little dinosaur? Yes it is! It's a ring. How fun is that? Let me tell you, it's way to much fun when you are a 3 and 4 year old. Also there are some grapes, baby trees (broccoli), and some more carrots.

Week of Butterflies day 2

The butterfly is made up of a peanut butter and jelly sandwich, match stick carrots, 2 red seedless grapes and the ends of a grape tomato. The bottom of the box has broccoli cut into minion sized pieces. On either side of the butterfly I rolled a piece of salami into a flower and also places a strawberry. The sky is shredded Italian blend cheese .

This lunch was actually one of the quicker lunches I have made. I am pretty sure I made it in just under 5 minutes for both boxes.
