The Elder's lunch

This was one of The Elder's lunches earlier this week. He needed something that would be easy on his tummy since he has been ill. I am still working on getting all the overly processed foods out of my freezer. I came across one of our favorite Green Giant veggie packets with sauce. It consists of cauliflower, carrots, yellow carrots,  cranberries, and some sort of light sauce. I topped with with fiesta lime pork. To the left I have cottage cheese and pineapple and a single turtle.

Sourdough star sandwich

I decided I would make some sourdough bread. This gave me the chance to use my star bread pan. I think it turned out pretty well. I have a peanut butter and jelly sandwich on sourdough bread, cottage cheese, strawberries, blueberries, and blackberries.

I made Colonel Sanders the same thing, only I made sure to cut her bread as thin as I could. I also have to admit that I regretted giving her cottage cheese and allowing her to feed herself.

Mama's first day of work.

I am now working part time. Today was a 9 hour shift which took up pretty much the whole day. I have to admit that I missed the minions eating lunch.

The boys had Biscoff sandwich cars, snap peas, carrots, cheese, ham, and blackberries. I put the milk down

on a lower shelf so that Tyke could help daddy out and pour some milk with lunch.

The Elder had leftover potatoes, lemon pepper pork, and AJ in sweet potato. I also have a sweet potato space ship and stars. To the right of that he has carrots, peas, and blackberries.

Yes, that is butter, real butter on his potatoes. I don't use that overly processed fake stuff here. Believe it or not, I have managed to lose weight too. It's all about moderation.

This is my lunch. Spring rolls made with  shrimp and salad greens, a sweet pepper, tomato, broccoli, and cottage cheese mixed with pineapple. I ended up buying some nuts out of the vending machine since I was still a little hungry.

My and The Elders lunches were in Easy Lunchboxes
The minions had their lunch in a little container that was found in the Target dollar section.

Soccer Practice Night

I have a class on some soccer practice nights. So I pack the minions into the car, give them dinner, drive up to the college, trade cars with the Elder (cause I have a minivan and he has a car. His car will not work with 4 minions in car seats) and then I go to class and he to soccer practice.

Tonight they had leftover rice a roni (I needed to use it to get that crud out of my house), left over pork balls in orange glaze, steamed whole baby carrots, and green beans. In the little container off to the side there I mixed crushed pineapple and cottage cheese. Below this is The Elders meal. Notice his has a little less variety. That's because he is not a fan of semi healthy food.

Mama Bento #2 Yellow rice sushi

I must have been feeling my oats today! It only took me 5 minutes to get Clark out of the bath, dressed, coat, hat, boots, gloves and backpack on and out the door. I lost track of time and I did not want him to miss the afternoon bus. After putting a very fussy Porkums down for nap/quiet time, I made myself something. I was trying to figure out what to do with the rest of the yellow rice. I wanted sushi. Only I was pretty sure the yellow rice was not sticky enough. So I reheated it with a little bit of water and gave it a try.

Today's offering is yellow rice sushi with salmon, carrot, and red pepper (this would have been yummy with avocado too!). The veggies are carrot sticks, red pepper, and tomatoes. The bottom tier has 1/3 cup cottage cheese, plumbs (I think), carrot coins, and raisins. This ended up sitting for a little bit since Colonel Sanders decided she would like to be fed. I was afraid to drop food on her, so I waited till she was done eating and asleep enough for me to move. I was surprised how well the fruit kept the cottage cheese in place. Outside of the pieces touching it, nothing else had cottage cheese on it.

As you can see, the sushi came out pretty well. The only way I could get this to work was to make sure I rolled the sushi very tight and cut it double the normal length. As long as I did that, the rice stayed in the roll pretty well. Still, it was not very sticky. Next time I will be sure to have an avocado on hand.

This bento I have had for a while. Does anyone remember Bento TV ? Well, I got this bento from her. The more I think about it, I have had this one for 2 years (it spent most of that time packed in a box). I don't know if she still has this one, but she does have an Ebay store and you can always watch her movies on her site. She makes some simple things.
